Vegan Cauliflower Bites



I’ve been trying out new ways to incorporate healthy vegetables into my snacks and side dishes. However, sometimes they can be a little boring, and repetitive! That is why I wanted to share this Roasted Cauliflower Buffalo Bites recipe. It is a healthy take on a personal favorite, buffalo chicken bites! Whereas the chicken bites are usually dripping in a sauce that contains preservatives and other harmful ingredients, the ingredients in this recipe with cauliflower are super simple, which is even better!

Baked Cauliflower

Sneaking in vegetables that have amazing health benefits is also super motivating to continue sneaking them into meals and snacks as well. Cauliflower is high in fiber, a good source of antioxidants, and a low carb alternative (Healthline). The seasonings within the recipe such as paprika, is high in vitamin A, is great to use in order to prevent inflammation, as well as aids in eye health (Healthline). 

So, let’s get to the fun part- the recipe! Enjoy this as a side dish, snack for small gatherings, or any other way you prefer.

Here’s how you make them!


  • 1 large head cauliflower
  • 1 tsp garlic powder / chopped garlic
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ smoked paprika
  • ¼ ground pepper
  • 1 tsp crushed chilli
  • 3 tbsp olive oil
  • 2 tbsp fresh parsley

Ranch Sauce:

  • ½ cup soaked cashews
  • ½ cup water
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 2 cloves garlic
  • Salt
  • ¼ cup fresh parsley


  • Preheat oven to 375°.
  • In a small bowl whisk together the crushed chilli, olive oil, lemon juice, all the spices and salt. Whisk well to combine. Pour the hot sauce mixture over the cauliflower florets and toss well to coat.
  • Spread the cauliflower in a single layer over a lined baking sheet and bake for 25-30 minutes, gently tossing the cauliflower approximately halfway through cooking. Cook until the cauliflower is tender and browned around the edges.
  • For the ranch sauce, blend every ingredient until getting a smooth cream.
  • Serve immediately. Chopped parsley on the top, optional.
